Nicolas Pavi Incipit Enjoy the Silence (Carpe Silenta)

Nicolas Pavi makes incredible elegant, pure and balanced wines in an unfashionable part of South Beaujolais.

Influenced by some of the great winemakers, he is devoted to his craft, tending to just 1.8 Hectares, bottling a number of different wines every year by parcel but also often by vessel.

This is from his vineyard in Popey planted in soils of granite and sand.

The wine was given ten months in cuvee before bottling by hand.
