House of Funk brewed their house golden sour and fermented it with a mixed culture in foeder 4, after primary fermentation finished they moved this beer into four ex-California red wine barrels with pinot gris grape must for 18 months.
Once it finished maturing in the barrels they then moved it onto their funkied foeder, foeder 2 to mature for another two months.
What has been packaged is a very bright, acid forward beer with complex notes of citrus fruits, oak, and wine, followed by a flavour of starburst, bright acidity, pinot gris grapes and a bone dry tannic finish.
