Bella Ancestral Method Estate Chardonnay 750ml

This is an extremely special wine, made as part of a farming test case at the Bella Estate.

Jay picked his Chardonnay vineyard twice: a first pass for clean & unaffected fruit, and a second pass for clusters showing powdery mildew.

This pét-nat is made entirely of powdery-affected clusters.

This fruit fermented faster, without developing any VA (as opposed to the clean fruit, which fermented more slowly and did develop VA).

The wine shows crisp apple notes, and developed a rich caramel undertone.

The result of Jay’s experiment: don’t fear the powdery!
