This rustic Saison was brewed with a base of pilsner-style malt, malted spelt and a small amount of undermodified wind malt.
Sterling hops were used in the mash, boil and a small dryhop addition.
Fermented and aged in an oak puncheon with yeast isolated from a spooky producer of Belgian Saisons, as well as the cultures that happen to live inside the barrel.
Saison can be a lot of things, this is just one of them.
