Dageraad Enology Series No. 2 : Petit Verdot - Saison Conditioned on Petit Verdot Pomace 750ml

A blend of 2 multigrain saisons, fermented with a mixed culture of brewer’s yeast, brettanomyces and lactic-acid bacteria, this is their second entry to the Enology Series.

These saisons were aged in barrels for 1 and 2 years respectively before being transferred onto Petit Verdot pomace from the Okanagan’s Painted Rock Winery for further conditioning.

The result is intricate vinous flavours interwoven with the complex funk and tartness of a mixed-culture saison.
